Paneer Makhani

The love for paneer seems to be growing more and more day by day in my house hold. Every week my kids insist on making a new dish out of paneer which makes me go in search for more paneer dishes. Here is one such paneer dish which I made yesterday.

Ingredients :

  • Paneer – 200 gms
  • Onion, big - 2
  • Tomatoes, ripe and big - 2
  • Ginger-garlic paste – 1 tsp
  • Cashew nuts, broken – 2 tbsp
  • Red chilli powder – 2 tsp
  • Roasted cumin powder – ½ tsp
  • Garam masala powder – 1 tsp
  • Milk or cream – 1 cup
  • Sugar – 1 tsp
  • Kasoori Methi – 1 tsp
  • Ghee – 1 tsp
  • Oil – 2 tbsp
  • Salt – to taste
  • Water – ½ cup
  • Orange food color – 2 pinches (optional)

Preparation:
Cut the paneer into cubes and sauté them in ghee till golden color in a frying pan and keep aside. In the same pan 2 tsp of oil and sauté chopped onions till they turn translucent. Grind these onions to a fine paste and keep aside. Puree the tomatoes and keep aside. In some hot water soak the cashew nuts for some time and grind it to a paste and keep aside. Take 2 tbsp of milk separately and dissolve the orange food color and keep aside.


Method:
Heat the oil in a pan and first add the Onion paste and fry till it starts turning color now add the ginger garlic paste along with a pinch of salt and fry till the onion paste turns till brown. The addition of salt will stop the paste from sticking to the pan.

Now add the tomato puree along with red chilli powder, cumin powder along with water and cook till the oil starts separating. Now add the cashew paste, milk, dissolved orange food color, garam masala powder sugar, salt and the paneer cubes and cook for 10 minutes. Finally before taking off the fire add the kasoori methi and serve hot with chappatis or Naan.
