Capsicum Peanut Poriyal

 

Peanuts or groundnuts are a staple crop in my In-laws place and they are one thing that is available all around the year in all the homes at their place. After harvesting the crop they half boil the peanuts with its shell and spread it in the Kalam to dry them in the hot sun. Once completely dry peanuts are taken out of their shells and stored in big containers. Thus they enjoy the peanuts all around the year and munching on them is a real delight as they a bit chewy. After seeing them use the peanuts in many dishes I too started adding them in stir fries and the result is a yummy, crunchy and protein packed side dish.

 

 

Capsicum Peanut Poriyal / Stir Fry

You’ll need:

Capsicum / Bell pepper – 1/4 kgs

Onion, medium – 1

Green chilli – 1

Mustard seeds – 1/2 tsp

Urad dal – 1 tsp

Sambar powder – 1-1/2 tsp

Turmeric powder – 1/2 tsp

Peanuts – 4 tbsp

Curry leaves – 1 sprig

Salt – to taste

Oil – 1 tbsp

 

 

Method:

Chop the onions and capsicum finely. Slit the green chilli. Coarsely crush the peanuts and keep it aside.

 

Heat a pan with oil and season with mustard seeds. Once it splutters add the urad dal and roast till golden brown. Now add the chopped onion, curry leaves and sauté till the onion turns pink. Now add the capsicum and cook for a 2 min till it wilts.

 

Add turmeric powder, sambar powder, salt and mix well. Close with a lid and cook over low flame for 2-3 min till the vegetables are cooked. Finally spread the crushed or coarsely powdered peanuts over the vegetables and give it a good toss.

 

Remove from flame and serve hot with sambar rice. This also goes well with chappatis.

 

 

I served this yummy stir fry to go with Chettinad Kaara Kulambu.
