Vanilla Cupcake

I baked these cute cup cakes a few days back for the reopening day of my younger one’s school. He wanted to take something for all his friends on the very first day and this cute easy breezy cup cakes were a sure winner with all his friends. This is not only so easy and simple but it just takes one bowl to put it all together leaving us with less mess. You can also bake these as a full fledged vanilla cake.

One Bowl Vanilla Cup Cakes

You’ll need:

Method:

Pre heat the oven @ 180 Degrees C. Line a muffin tray with paper liners and keep it ready.

Sieve together all purpose flour and baking powder.

In a bowl, place the butter and powdered sugar. Mix once by a spatula.

Now add the sieved flour and mix once more.

Make a small well in the middle and break open the eggs in it.

Add milk, vanilla essence and beat at medium speed till the batter is soft and fluffy. Approx. 2-3 mins by electric hand mixer.

Scoop the batter into the paper cups and bake for 25-30 mins till a skewer inserted comes out clean.

Variations:

You can convert these into chocolate cup cakes by adding 2-3 tsp of cocoa powder while sieving the flour.

Remember this cake. Avoid vanilla essence and instead add 1 tsp of orange zest to enjoy the cup cakes with an orange flavor.

You can also add handful of almond meal and replace the vanilla essence with almond extract.

Actually there is so much you can come up with by playing around with the flavors and I’m sure that the kids will enjoy all of them to find in their snack box.

Notes:

Make sure that the butter is soft and at room temperature.

Use 1 cup of powdered sugar. I used only 3/4 cup as found it overly sweet the first time I baked.

If the batter is way too thick adjust by adding little more milk.

Mine took exactly 35 mins to get done.

Baking timings will vary according to the ovens.
